做(zuò )法(fǎ ):洗(xǐ )净(jìng )宰好(hǎo )鲫鱼(yú ),洗净淮(huái )山和薏(yì )米。用清水把陈(chén )皮泡(pào )软,拍裂一小块(kuài )姜(jiāng ),热(rè )锅,用(yòng )姜块在锅(guō )上(shàng )擦(cā )一(yī )遍,放两勺(sháo )油(yóu ),待(dài )油六成(chéng )热下(xià )鱼(yú ),煎至微黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮好的鲫(jì )鱼和其他材料,武火煮(zhǔ )沸,转中小(xiǎo )火(huǒ )煲一(yī )个半小时,下盐调味即可品尝。
