做(zuò )法:洗净(jìng )宰好(hǎo )鲫鱼,洗(xǐ )净(jìng )淮山和薏(yì )米。用清水(shuǐ )把陈(chén )皮泡(pào )软(ruǎn ),拍裂一小块姜(jiāng ),热(rè )锅,用(yòng )姜(jiāng )块在(zài )锅上(shàng )擦一遍(biàn ),放两勺油,待油六成(chéng )热下(xià )鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮(zhǔ )好(hǎo )的(de )鲫鱼(yú )和(hé )其他材料,武火煮(zhǔ )沸,转中小火煲(bāo )一个半小时,下盐调味(wèi )即可(kě )品尝。
