做法:洗净宰(zǎi )好鲫(jì )鱼,洗净淮山和(hé )薏(yì )米。用(yòng )清水把陈皮泡软(ruǎn ),拍裂一小块(kuài )姜(jiāng ),热(rè )锅,用姜块在锅上(shàng )擦一(yī )遍,放两(liǎng )勺油(yóu ),待油(yóu )六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清(qīng )水,放(fàng )入(rù )煎煮好的鲫鱼(yú )和其(qí )他材(cái )料,武火煮(zhǔ )沸,转中(zhōng )小(xiǎo )火煲(bāo )一个半(bàn )小(xiǎo )时,下盐调味(wèi )即可品尝。
