做(zuò )法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏米。用清水(shuǐ )把(bǎ )陈(chén )皮泡软,拍裂一小块(kuài )姜,热锅,用姜块在锅上擦一遍(biàn ),放(fàng )两勺(sháo )油,待油六成热下鱼,煎至微(wēi )黄(huáng )。煮(zhǔ )沸瓦(wǎ )煲里的(de )清(qīng )水,放(fàng )入煎煮(zhǔ )好的鲫(jì )鱼和其他材料,武火煮沸,转中小(xiǎo )火(huǒ )煲(bāo )一个(gè )半小时,下盐调味(wèi )即(jí )可品尝。
