做法:洗(xǐ )净宰(zǎi )好(hǎo )鲫鱼(yú ),洗净(jìng )淮山和薏米。用清(qīng )水把陈皮(pí )泡软,拍(pāi )裂(liè )一小块姜,热锅,用(yòng )姜块(kuài )在锅(guō )上(shàng )擦一遍,放两勺油,待油六成(chéng )热下鱼,煎至(zhì )微黄(huáng )。煮沸(fèi )瓦煲(bāo )里的清水(shuǐ ),放(fàng )入(rù )煎煮(zhǔ )好(hǎo )的鲫鱼(yú )和其他(tā )材料(liào ),武(wǔ )火煮(zhǔ )沸,转中(zhōng )小火煲一个半小时,下盐调味即可品尝。
