做法(fǎ ):洗净宰好(hǎo )鲫鱼(yú ),洗净淮山和薏米(mǐ )。用(yòng )清水(shuǐ )把(bǎ )陈皮泡软,拍(pāi )裂(liè )一(yī )小块姜,热锅,用(yòng )姜(jiāng )块在(zài )锅上擦(cā )一(yī )遍,放两(liǎng )勺油(yóu ),待(dài )油六成热(rè )下鱼,煎至微黄。煮沸(fèi )瓦(wǎ )煲(bāo )里的清(qīng )水,放入(rù )煎煮(zhǔ )好的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸(fèi ),转中小(xiǎo )火煲(bāo )一个半小时,下(xià )盐调(diào )味即可品尝。
