做法(fǎ ):洗净(jìng )宰(zǎi )好鲫鱼,洗(xǐ )净(jìng )淮山和(hé )薏米。用(yòng )清(qīng )水把陈皮(pí )泡软,拍裂一小块姜(jiāng ),热锅,用姜(jiāng )块在锅上擦一(yī )遍,放(fàng )两勺油(yóu ),待油六(liù )成热下鱼,煎(jiān )至微(wēi )黄(huáng )。煮沸(fèi )瓦煲(bāo )里的(de )清水(shuǐ ),放(fàng )入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火煮沸,转中小(xiǎo )火煲(bāo )一个半小(xiǎo )时,下(xià )盐调(diào )味(wèi )即可品尝。
