做法(fǎ ):春笋切成片后(hòu )加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱(cōng )段(duàn )翻(fān )炒(chǎo )1分钟(zhōng )左右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加(jiā )入少量清水半(bàn )掩住(zhù )春笋(sǔn ),盖上锅盖(gài )大火煮开后转(zhuǎn )中火(huǒ )。煮(zhǔ )到水(shuǐ )快熬(áo )干的(de )时候加入(rù )盐(yán ),翻(fān )炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
