做法:春笋切(qiē )成片(piàn )后加(jiā )少(shǎo )许盐捞出后(hòu )用(yòng )清(qīng )水(shuǐ )浸(jìn )泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热(rè ),倒入(rù )2勺油,放(fàng )入生姜(jiāng )、春笋、牛(niú )肉片(piàn )、葱段(duàn )翻(fān )炒1分钟(zhōng )左(zuǒ )右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量(liàng )清水半掩住春笋,盖(gài )上锅(guō )盖大(dà )火煮开(kāi )后转中火。煮(zhǔ )到水快熬干的时(shí )候(hòu )加入盐,翻(fān )炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
