做法:洗净宰好鲫鱼,洗(xǐ )净淮山和(hé )薏米(mǐ )。用清水(shuǐ )把陈(chén )皮泡软,拍(pāi )裂一小(xiǎo )块姜,热(rè )锅,用(yòng )姜块在锅上(shàng )擦一遍,放(fàng )两(liǎng )勺(sháo )油,待油六成热下鱼(yú ),煎至微黄。煮(zhǔ )沸(fèi )瓦(wǎ )煲里的清水(shuǐ ),放(fàng )入(rù )煎(jiān )煮(zhǔ )好的鲫鱼和其他材料,武(wǔ )火(huǒ )煮沸,转中小(xiǎo )火煲一(yī )个半小(xiǎo )时,下盐调味(wèi )即(jí )可品(pǐn )尝。
