做(zuò )法:春笋切(qiē )成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜(jiāng )切(qiē )片,葱(cōng )切(qiē )成段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分(fèn )钟左(zuǒ )右。再(zài )加入生抽(chōu )、老抽(chōu )、蚝油翻(fān )炒均(jun1 )匀,加入少量(liàng )清水(shuǐ )半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖大火(huǒ )煮开后(hòu )转中火(huǒ )。煮(zhǔ )到水快熬干的(de )时候加入盐,翻炒(chǎo )均(jun1 )匀稍(shāo )收汁时(shí )盖上(shàng )锅(guō )盖焖。
