做法:春笋切成(chéng )片(piàn )后(hòu )加少许盐(yán )捞出后(hòu )用清水浸泡,生姜(jiāng )切片(piàn ),葱(cōng )切成段(duàn )。锅烧(shāo )热,倒入2勺(sháo )油(yóu ),放入生(shēng )姜(jiāng )、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清(qīng )水半(bàn )掩住(zhù )春笋(sǔn ),盖上锅盖(gài )大火煮开后转中(zhōng )火。煮(zhǔ )到(dào )水快熬干(gàn )的时候加入盐,翻(fān )炒(chǎo )均匀稍收(shōu )汁(zhī )时(shí )盖上(shàng )锅盖焖。
