做(zuò )法:春(chūn )笋切成片后(hòu )加少许(xǔ )盐捞(lāo )出后用(yòng )清水浸泡(pào ),生姜(jiāng )切(qiē )片,葱切成(chéng )段。锅烧热,倒(dǎo )入(rù )2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量(liàng )清水半(bàn )掩住春笋(sǔn ),盖(gài )上锅(guō )盖大(dà )火(huǒ )煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到(dào )水快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖(gài )焖。
