做(zuò )法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和(hé )薏米(mǐ )。用清水(shuǐ )把陈(chén )皮泡软,拍裂一(yī )小块(kuài )姜(jiāng ),热(rè )锅,用(yòng )姜块(kuài )在锅上(shàng )擦一(yī )遍,放两勺油,待(dài )油六成(chéng )热下(xià )鱼,煎至微(wēi )黄。煮沸瓦煲(bāo )里的清(qīng )水,放(fàng )入煎(jiān )煮好的(de )鲫鱼和(hé )其(qí )他材料,武火煮(zhǔ )沸,转中小(xiǎo )火煲一个半小时,下(xià )盐调味即(jí )可品尝。
