做法:洗(xǐ )净宰好鲫鱼,洗净淮山(shān )和薏米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍裂(liè )一(yī )小块姜,热(rè )锅,用(yòng )姜(jiāng )块在锅(guō )上擦一(yī )遍,放(fàng )两勺油,待油六成(chéng )热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎(jiān )煮好的(de )鲫鱼(yú )和其他材料,武火(huǒ )煮沸(fèi ),转中小火煲一(yī )个半小时(shí ),下盐(yán )调味(wèi )即(jí )可品尝。
