做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡(pào )软(ruǎn ),拍(pāi )裂(liè )一小块姜,热锅,用(yòng )姜(jiāng )块在(zài )锅上(shàng )擦一遍(biàn ),放两勺油,待(dài )油六成热下鱼,煎至(zhì )微黄(huáng )。煮(zhǔ )沸瓦煲里的(de )清(qīng )水,放(fàng )入(rù )煎(jiān )煮(zhǔ )好的鲫(jì )鱼和(hé )其他材(cái )料(liào ),武(wǔ )火煮沸,转(zhuǎn )中(zhōng )小火煲一个半小时(shí ),下盐调味即可品尝(cháng )。
