做法(fǎ ):洗净(jìng )宰好(hǎo )鲫鱼,洗(xǐ )净淮(huái )山(shān )和薏米。用(yòng )清水(shuǐ )把陈(chén )皮(pí )泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦(cā )一(yī )遍,放两勺(sháo )油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲(bāo )里的(de )清水,放入(rù )煎煮(zhǔ )好的鲫鱼和其他(tā )材料(liào ),武(wǔ )火(huǒ )煮沸,转中小火煲(bāo )一(yī )个半小时(shí ),下盐(yán )调味(wèi )即可品(pǐn )尝。
