做法:春笋切(qiē )成片后加(jiā )少(shǎo )许盐捞(lāo )出后用(yòng )清(qīng )水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热(rè ),倒入(rù )2勺油(yóu ),放入(rù )生姜、春(chūn )笋(sǔn )、牛肉(ròu )片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀(yún ),加入少量(liàng )清水半掩住(zhù )春笋,盖上(shàng )锅(guō )盖大火(huǒ )煮开后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
